Mammoth variety Sunflower?

can you eat the seeds? i didnt really research that before i bought them but they look different than the ones i usually eat. (from Store) ive already grown them and i think they are getting close. does 3 months sound about right for harvest? they are starting to droop, like alot, but are not discoloring
